Training

For a number of years now we have successfully run a series of practical training sessions for interior staff, pursers and chefs, including cocktail training, chocolate tasting and wine training.

 

Due to the success of these sessions we have worked with our preferred partners to expand on our offering and are delighted to now be able to offer a programme of new training opportunities, including Ham Carving , Flower arranging and cheese tasting. We can also arrange sessions with our butchers and fish mongers, if there are particular skills or area of interest that you would like to discuss with them. Our new partnership with The London Academy at Jane Urquhart Limited, brings another fantastic opportunity to deliver excellence in service, with their training for interior household staff. See page 193 for details.

The training available falls into several categories:



  • The free sessions run in the South of France or London: Cocktails / Chocolate / Wine
  • Intensive sessions, for groups and individuals, arranged at your convenience: Cocktail training / Wine Training / Floristry
  • UK-based training with our local suppliers - fish mongers, butcher, carving (Spanish Hams), Cheese tasting and floristry

Cocktail Training learn to mix the perfect cocktail

At the start of every summer season we conduct free cocktail and spirits training. Having trained crew from some of the largest and most heavily chartered yachts, including Leander, Meduse, Achilles and Zenobia, we are now delighted to be able to offer you this exclusive opportunity.

FREE Training Session

In a free 3 hour session, onboard your yacht, we provide you and your team with the skills to create some superb cocktails, using the latest ingredients and techniques, including Perfect Serves and signature / themed cocktails. Ideal for all Super yacht Stewards and Stewardesses, this course provides an introduction to cocktail-mixing, with additional advice on bar restocking and food matching. And to make things easy for you, we will bring everything with us, except ice, including all the spirits, mixers, glasses and equipment.

NEW 2-Day Training Course

We also offer a further, more comprehensive training opportunity in the form of a 2-Day Cocktail Training Course, held off-site. This course offers an in-depth approach to cocktail making. Over two days you will explore the essential aspects of cocktail mixing; the key spirits and their individual qualities, as well as the history and recipes for a wide range of classic cocktails, with hands-on opportunities to develop and hone your skills. This course will provide you not only with the ability to experiment and develop your own style, but also the confidence to create the theatre of cocktail-mixing in order to provide a total bar experience for your guests. Example: 2-day course for up to 6 people in South of France - from £3,000 per group (including all ingredients and lunch, per group)

World-Class Tuition

Once again, world-renowned mixologist Andy Pearson will join Shore Solutions team in the South of France to guide you through this training, specifically designed to meet the needs of the Superyacht industry. Andy's credentials speak for themselves. Head of Bar Operations at Roast Restaurant in London, he is consultant to some of the world's most exclusive drinks brands, hotels, bars and restaurants and has his own segment on the primetime BBC TV show 'Something for the Weekend'. Winner of the UK Bartenders Guild National Championships and 5th in the IBA World Championships, he was also a judge at the 2007 Cocktail World Cup.

Chocolate Tasting indulge your senses...

Following the success last year in our chocolate tasting sessions, in conjunction with La Maison du Chocolat, our expert partner, we are delighted to offer the opportunity once again.

This session will offer the opportunity to:



  • Discover the origins of chocolate and trace the steps of production from the cacao bean to a chocolate
  • Taste couvertures, a key ingredient in bonbons. Learn to distinguish the subtle differences in the taste of the different cocoa vintages and percentages. Taste chocolate infused with different flavours
  • Watch the preparation of a ganache and taste it warm

Wine Training

Do you know your Sancerre from your Pouilly Fume? Your Chablis from your Burgundy, or the difference between a Premier and a Grand Cru?

If you have a team that need to be guided through the basics, or you want to learn more about a specific region, we can tailor the training to meet your requirements. We also offer advice on cellar management and stocking, food matching and provide tasting notes. Whether you are based in the Med, the Caribbean, or your boat is undergoing a yard period, we will be there to offer free wine training and vineyard visits, throughout the year.

Cheese Tasting

Simply by spending a couple of hours with our wonderful cheese suppliers at La Fromagerie, will provide a greater level of your understanding of cheeses.

The session includes production techniques, regionality and seasonality of flavours, as well as ideas to create the perfect cheese platter and suitable wines with which to accompany it.

Ham Care Advice & Carving Training

If you regularly purchase whole Spanish hams, this training is invaluable. Our supplier will happily offer their master carver to provide:

  • Information on ham production
  • Details of how to best care for your ham
  • Recommended storage conditions and equipment
  • Recommendations on how to carve your ham safely
  • Tips on how to get the best return from all parts of the leg and reduce watage
  • Practical tips on display, serving suggestions and pairings

Flower Arranging

Our relationship with Hayford & Rhodes, the renowned florist, enables us to offer training in floral arrangements through their flower school.

They offer a range of seasonal classes which give students a unique insight into floristry and the opportunity to learn about contemporary techniques and hot trends.
